HUBBY'S REQUEST: CHICKEN WITH CHICKPEAS AND VEGGIES. Once in a while, my husband requests that I make this dish. It doesn't taste the same every time I make it because I don't use a recipe. It became a running joke when I cook a dish that everyone likes: savor it now because you won't experience the same taste next time. On the other hand, it may turn out better than before.
I was particularly excited to cook this dish recently because of this brand of smoked paprika. I can tell that it elevated the dish on a different level. I took photos to document the process:





Ideally, I should have used Spanish chorizo. I didn't have any so I used my husband's stash of knackwurst. I also used sweet potato instead of potato because it was available at the moment. I added tomato paste and homemade veggie broth to cook the veggies and meat, bay leaves, and seasoned with smoked paprika, salt, and pepper. I took these steps prior to cooking: Boil chickpeas in a separate pot, cut up veggies, and slice the meat.
