FISH PATTIES: SALMON, TUNA AND TOFU. I absolutely love getting creative in the kitchen, especially when it comes to cooking fish patties! Whenever I have leftover mashed potatoes, I whip up some delicious salmon croquettes. On a recent family adventure in Toronto, I decided to make salmon patties, but I had to improvise a bit. Without potatoes, I crafted some homemade bread crumbs, and since I didn't have fresh herbs, I went with dried parsley instead. I mixed in mayo, Worcestershire sauce, and mustard, along with salt and pepper, to create a flavor explosion. To bind everything together, I used eggs, and for that extra crunch, I added minced celery. To ensure the seasoning was just right, I did a quick taste test by cooking a small piece before diving into the whole batch of patties.


My husband and I have two fantastic versions of tuna and tofu cakes: a zesty Thai version and a classic regular version. For the Thai twist, we mix in kaffir lime leaves, green onions, fish sauce, ginger, garlic, sugar, egg, and curry paste. The regular version is equally delightful with green onions, egg, mayo, mustard, salt, pepper, and Worcestershire sauce. Both are absolutely scrumptious!

SABBATH DAY RECHARGE: ONLINE CRAFT AND CHAT SESSIONS IN THE AFTERNOON.

After an uplifting church service on Sunday morning, I can't wait to spend the afternoon with family and friends! I host virtual Zoom gatherings that I affectionately call craft and chat sessions. It's a fantastic way to hit pause on life's distractions and truly focus on what matters most: quality time with the people I cherish. My friends and family know they have an open invitation to join in for these joyful "catching up moments" with me!

ENLIGHTEN AND IGNITE


REPURPOSE PROJECT: GREETING CARDS. Growing up, I was showered with countless cards from my parents, and over the years, I've been blessed with even more from friends and family. I've treasured every single one, keeping them safe in a special box.


One day, inspiration struck! I decided to cut up all the front exterior flaps of the cards and save the heartfelt messages inside. I transformed those front flaps by adding cardstock and embellishments to create brand-new cards. Some of these creations have been donated, while others have been lovingly shared with family and friends.

REFOCUS AND DELIGHT


THE IMPORTANCE OF SABBATH REST: DWELLING IN GOD'S PRESENCE. The Sabbath day can be any day of the week, and I choose Sunday as my day of rest. It took years for me to fully grasp the significance of this day in rejuvenating my weary soul. I once lived with a 'productive mentality,' where busyness was central to my existence, and my priority was the number of tasks checked off on my to-do list. However, my perspective transformed when I shifted my focus to living a fulfilled life. To attain fulfillment, I decisively eliminate distractions on my Sabbath day.
