My husband and I have a new addition to the kitchen counter: a new panini maker. Ever since I had a craving for a chicken mozzarella pressata a few weeks back, I had a longing to make one. I was able to use the panini maker yesterday when I prepared GRILLED CHEESE and VEGGIE PANINI for our bible study group. For the grilled cheese, I used artisanal bread and added shredded gruyere and gouda cheese. Then, I brushed both sides of the sliced bread with butter and placed it on the panini maker. For the veggie panini, I used whole grain bread and coated one side of the bread with homemade pesto before adding grilled zucchini/bell peppers and shredded mozzarella cheese. Then, I brushed vegan mayo on both sides of the sandwich before toasting in the panini maker. To top it off, we served MARINARA dipping sauce (simmer chopped tomatoes with a dash of mediterranean oregano and Italian seasoning, salt, pepper, and a pinch of sugar for 30 minutes until reduced, then puree in blender.
