FEASTING ON FALAFEL. I remember the last time I made falafel and was not thrilled with the results. I used the toaster oven instead of the air fryer. My challenge now is how to make it moist. After browsing through recipes online, I decided to experiment to see if I can achieve the desired texture. I didn't follow a particular recipe but added an additional step that I think led to a moist texture.


Additional step: In a small bowl, I mixed potato starch and chickpea flour. I used this mixture to coat newly formed chickpea patties.
