MORE VEGGIES, LESS NOODLES. I love noodles. A lot. Pad See Ew, Pad Thai, Jap Chae, Vietnamese Vermicelli Bowls, Chow Mein, Italian pasta dishes, and the list goes on. One day, I had a bag of sugar snap peas that reminded me of a TV episode in Jamie Oliver's 15-minute meals when he made Asian Noodle Stir Fry. So I used my food processor to shred vegetables- carrots, bell peppers, sugar snap peas, onions, and broccoli. I also minced garlic and ginger. My husband cooked the noodles (he used noodles for Pad Thai) , added the noodles to the stir-fried vegetables, seasoned with soy sauce, sesame oil, salt, pepper, and garnished with cilantro, toasted sesame seeds, and fried egg.
