I have been eating out for two weeks while on vacation. I actually didn't enjoy it because I always wondered about the sodium and sugar content of the dishes as well as sanitation practices in the restaurants. I'm glad to be back in the kitchen today. Here are the dishes that I prepared today: ROASTED BEETS, SAUTEED FARRO, SAUTEED MUSHROOMS, CILANTRO LIME DRESSING, AND PESTO.

My husband cooked this zaatar-spiced eggplant. It was so tender. Thought I'd include this because I topped this eggplant with sautéed farro and mushrooms
