CUTTING OUT PASTA CARBS: EGGPLANT LASAGNA AND EGGPLANT ZUCCHINI LASAGNA.


As I watched my husband slice the eggplant and zucchini using the mandoline, sauté the filling (mushrooms, caramelized onions, artichokes), and layer the cheeses and marinara sauce, I can imagine the yumminess that I was about to experience. The taste was beyond what I have imagined! He made this dish twice in a month, with variations in cheese, filling, and layers.


Pasta sub: Eggplant slices

Filling: Zucchini, Mushrooms, Artichokes, Caramelized Onions

Cheeses: Mascarpone, Ricotta, Mozzarella, Parmesan
