A REFRESHING SALAD. Couscous salad is one of my favorite salads. It is so easy and simple to make. First, cook the couscous. Let it cool. Next, chop up parsley, mint, and dice tomatoes (remove the seeds to prevent a soggy texture), mini or bell peppers (red, yellow, or orange), and mini cucumbers. Mix all ingredients in a bowl. In a small bowl, mix olive oil and lemon juice then add to mixture. Mix thoroughly and season with salt. This dish is perfect for picnics!
