BAKED SALMON WITH MUSTARD. When I purchase a big filet of salmon, I usually cut it up into 3 pieces and use a different sauce/marinade for each piece. I have tried using a ginger sesame marinade, Greek with oregano and dill sauce, and a dijon or yellow mustard marinade. The dijon or yellow mustard marinade is my current favorite because it is so simple to make and so delicious.
In a small bowl, mix a handful of finely chopped parsley, finely chopped 3 garlic cloves, 1/4 cup dijon or yellow mustard, 1 Tbsp lemon juice, and 1 Tbsp of olive oil. Set aside. Place salmon on a small pan lined with aluminum foil. Season filet with salt and pepper on each side. Then, coat the filet with the mixture. Bake at 375F for 25 minutes. Serve with vegetables and rice, or your favorite salad.
