MISO SALMON AND VEGGIE FRIED RICE. Miso Salmon is one of my favorite dishes. The marinade consists of only three ingredients: miso paste, Mirin, and sugar. After marinating overnight, the salmon was cooked in the in the air fryer at 370F for 10- 12 minutes.
I always have riced cauliflower in the freezer as well as cooked white and brown Basmati rice for times I crave for fried rice. As I watch my oil usage when cooking, I learned to use vegetable broth to cook the vegetables in this dish. I was able to use very minimal oil to sauté the minced garlic and onions. I added frozen peas, shredded carrots, and broccoli florets. You may add any vegetable or beans.The frozen riced cauliflower was mixed in with the vegetables. I added a little bit of homemade veggie broth just enough to cook the vegetables. Then, I added the leftover Basmati rice before seasoning with low-sodium soy sauce, oyster sauce, and hoisin sauce.
