PASTA SUBSTITUTE: SWEET POTATO SPIRALS. There were so many times in the past weeks when I gave in to my pasta cravings. Now that I am seriously trying to lose the pandemic weight gain, I decided to go back to pasta substitutes. My favorite is the sweet potato spirals. First, I use a vegetable slicer to make the spirals. Then, I evenly distribute a layer of spirals in the Air Fryer and bake at 370F for 5-8 minutes until slightly brown. Transfer to a plate and top with your preferred sauce. For this dish, I used leftover Eggplant Caponata😊.
