WILD PACIFIC COD, TWO WAYS. I always check the seafood section when shopping at Costco. On a recent visit, I bought a filet of wild Pacific cod. I got excited when I thought of two of my favorite dishes: MISO COD and FISH AND CHIPS. My husband graciously cooked those dishes for me. The Miso Cod was marinated with miso, mirin, and sugar overnight before cooking in the oven at 350F for 15 minutes. It was so tasty. The other dish had a crunchy coating and flaky flesh. The batter was light because of the carbonated mineral water added to the mixture. I suggested cooking it in the air fryer for health reasons but my husband insisted on frying it for texture and taste. As expected, I rationalized that I don't eat fried foods everyday. I savored every bit of it!
