tweak and nourish

I try to look through the freezer on a weekly basis to see what I can whip up. Honestly, I'm not a big fan of freezer burn on frozen foods. So, while checking the freezer last week, I saw a pack of frozen cooked Japanese sweet potato. What to do?


The first idea that came to mind was WAFFLES! You all know by now after reading my posts that I love waffles. I can create whatever my tummy desires:) I even made falafel waffles a month ago!


It was so easy-I put all the ingredients in my trusty Vitamin blender. Here goes the list: sweet potato, oats, unbleached flour, baking powder, 2 eggs, vanilla, and almond milk. I didn't add any sweetener but still turned out to be pretty good:)
