QUICK AND EASY DISH: ROASTED BROCCOLI PIZZA. There was a time last week when I needed something quick and easy to eat without much preparation so I checked the freezer and fridge for leftovers. With roasted broccoli on hand, I decided to make pizza to make it appetizing. First, I warmed up a homemade whole wheat and flax Persian flatbread. I brushed it with Rao's marinara sauce, dusted with garlic powder, sprinkled shredded mozzarella cheese, arranged thin slices of tomatoes and roasted broccoli, and drizzled homemade pesto all over. Then, I baked in the toaster oven just until the cheese melted. The bread was crisp and not soggy at all. So, if you have leftover veggies, cheese, and any piece of bread, make pizza!
