AIR-FRIED LEMONGRASS TOFU. My husband and I have been visiting our favorite places in Houston after being away for ten years. We have discovered that some of our favorite restaurants are still thriving even during this pandemic. While driving around, we reminisced about the deep fried lemongrass tofu at a hole-in-the-wall tofu place. We couldn't remember where it was located so he re-created the dish.


First, he drained the water from the tofu and rubbed a homemade paste of finely minced lemongrass, galangal, garlic and salt all over the tofu block to marinate overnight in the fridge. Then, he cut the tofu into cubes and placed inside the air fryer at 370F for 20 minutes. I like it extra crispy so I tend to add an extra five minutes of cooking time. Total cooking time depends on your preference for texture. The golden nuggets of goodness blends well with a dip of sweet chili sauce. Don't be alarmed if you end up eating it all!
