PITA PIZETTES. It has been hot in Southern California lately so I avoided using the big oven for baking. For this quick dish of leftovers, I used the toaster oven to warm the pita and melt the cheese. The toppings include roasted kabocha squash, smoked portabello mushrooms, caramelized bell peppers, and fresh mozzarella cheese.
