When I see that my parsley is overgrown and I have cilantro in the fridge, I make FALAFEL. I prefer soaking the chickpeas rather than buying canned chickpeas. It's an extra step to soak the beans but it is worth the effort if you're trying to eliminate unnecessary sodium in your diet. This time, I added a dash of Middle Eastern 7-spice and it made all the difference in the taste. I used very minimal oil when pan-frying the patties and it still came out crunchy on the outside and moist on the inside. This was the best batch I have made:)
