VEGAN GREEN PASTA SAUCE. I was so inspired to make this dish after watching Jamie Oliver make his Quick Green Pasta. It was so appetizing that I immediately looked in the freezer and searched for green vegetables. Fortunately, I found frozen peas, asparagus spears, spinach, and broccoli. I didn't see the edamame tucked all the way inside the freezer. I will add it the next time I make this sauce.
The steps: Saute minced garlic, chopped onions, and vegetables. Add white wine and season with salt and pepper. Reduce the white wine, transfer the mixture in the blender, and puree to make the sauce. Pour the sauce back on the pan and add pesto. Add pasta and mix thoroughly. Serve with a sprinkle of nutritional yeast. For a vegetarian serving, top with Parmesan cheese. While Jamie added a lot of parmesan cheese to the mixture in the pan, I opted to have it on the side to reduce the likelihood of a heaping second serving😋
