ENERGY FIBER BITES. When I find myself hooked on a daily dose of carb-laden sweets, I know that I need to step back and have something healthy readily available. You may have seen my previous post on energy bites and guessed that these bite-size treats are my favorite. My sister loves this treat as well. I tried to convince her to make it herself instead of buying it on a weekly basis.
My energy bites vary each time I make it. I added more ground flax in this recipe, hence, the name 'fiber' bites. In a food processor, pulse raw almonds, unsweetened coconut flakes, ground toasted sesame seeds, dark cocoa powder, oats, ground flax, dates (remove pits), and peanut butter. If I don't have all of these ingredients, I use any nut, a sweetener (dates, maple syrup), and a binding ingredient (peanut or almond butter). The desired consistency is reached when the mixture is not too wet and not too dry, just right when it holds its shape when formed into squares or balls.
