SPAGHETTI WITH VEGAN ARRABIATA SAUCE. My sister, who follows a plant-based diet, told me that this blog category is her favorite. So I try to post a dish on a weekly basis. I know that she'll appreciate this meatless dish.
I like all sauces on spaghetti: Bolognese, Carbonara, Pesto, Alfredo, etc. But this Arrabiata sauce tops it all for me. I think because it's veganšMy husband prepared this dish with eggplant, red/yellow bell peppers, onions, garlic, olives, oregano, basil, red chili flakes, tomato sauce, white wine, salt, and pepper. For added texture, you may add vegan spicy Italian sausage. Because the sauce is so light, you may find yourself going back to the kitchen for more servings as I did!
