REPURPOSING LEFTOVERS: HEALTHY-ISH PASTA DISH. I don't like to waste food so I try to come up with dishes that I can put together in less than 30 minutes. I take inventory of what I have in the refrigerator/freezer and pantry on a daily basis. On one particular day when I didn't want to slave over the stove, I saw over ripe tomatoes and prosciutto. So I sautéed garlic, tomatoes, prosciutto and blanched some spinach. Then, I remembered the leftover bolognese sauce with chickpeas that I cooked the previous week which I kept in the freezer. Here is the healthy-ish pasta dish (I forgot to take a photo of the Parmesan mound on top)...
