ENERGY BITES. I think about my sister every time I make these healthy bites. I introduced this snack a while back and she wasn't really keen about it when she first tasted it. Now she's hooked and buys it all the time. I wish she lives close by so I can share when I make a big batch.
Lately, I added pumpkin seeds to the mix. Dates are constant as sweetener, nuts vary, and binder varies as well. For binder, I use coconut oil or a nut butter. You may use date syrup, honey, or maple syrup. For this recipe, I used dates (pits removed) , cocoa powder, walnuts, ground toasted black sesame seeds, unsalted pumpkin seeds, rolled oats, ground flax seeds, creamy unsweetened and unsalted peanut butter, and coconut oil (needed more binder). All ingredients go into the food processor. So fast and easy! A healthy alternative in satisfying my sweet tooth😊
