VEGAN PASTA SAUCE: KALE AND SPINACH PESTO. Morning temperatures have been pleasant lately and that means more gardening time for me. I get excited to put on my gardening attire and you'll know why when you see the photo. My friend gave me the apron and the garden clogs are from Costco. I thought I'd give you a visual on what I wore when I harvested kale in the backyard to make this dish.
What to do with too much kale? When I was craving for pasta the other day, I decided to make Kale and Spinach Pesto for the sauce. I started with roasted garlic in a food processor and added blanched kale, raw spinach (not in photo), a handful of basil, and olive oil. After pulsing the mixture for a few minutes, I transferred it to a sauce pan and added garlic paste with lemon. I cooked the pasta prior to making the sauce and reserved a cup of pasta water. I added a small amount of pasta water in the sauce pan when I mixed the pasta with the pesto and seasoned with salt and pepper. On a separate pan, I toasted Panko breadcrumbs, nutritional yeast, and garlic powder as my sub for Parmesan cheese. It was amazingly delicious!
