SWEET POTATO "PASTA". I was craving for pasta last weekend. When my husband and I went to Trader Joe's, I went to the pasta aisle and read the carb content for every pasta. All had high carbs!. So I opted to check out the produce section and bought sweet potato ribbons instead. I used the homemade pesto and leftover marinara for sauce.


In a shallow covered pan, I boiled the sweet potato for 4-5 minutes. In a separate pan, I sautéed celery and sweet mini peppers. Then I added cruciferous veggies, granulated garlic, dash of salt and pepper, marinara sauce, and homemade pesto. Hmmm...craving satisfied without guilt!
