CAKE TO TWEAK: FIRST FROSTED UBE CAKE. My husband and I were invited to attend a graduation party a few months ago. I asked him if he can take care of the food and I take care of the gift. He had a lot of ideas but decided on Focaccia and Ube Cake. This was his first time making the cake (not counting the Ube Mille Crepe he made last year) , complete with frosting.
After a few bites of this cake at the party, he felt he needed to tweak it. I thought it was perfect. He was determined to bake another one to his liking. So, when we visited family in Canada, he asked my mom for her chiffon cake recipe and was able to bake another Ube cake with a better texture. I am pretty sure that when he bakes another Ube Cake, he will be using my mom's chiffon cake recipe. Here is a photo of the Ube Cake that he felt needed tweaking:
