I had colonoscopy a week ago and loved the feeling of a cleansed system. After the procedure, I vowed to be more intentional in what I put in my mouth. I felt that I was given a brand new season to start fresh with healthy choices.
SALMON CAKE WITH PESTO AOILI, BLACK RICE WITH BEETS AND SPINACH, SAUTÉED GREENS. A few days ago, I made a big batch of salmon cakes and saved some in the freezer. I ate it with cooked Black Rice that I sautéed with cubed beets and spinach. I also added sautéed greens. Remember the homemade pesto I made the previous week? I mixed it with a little bit of vegan mayo and topped on a salmon cake.
