I love making veggie fritters. For me, it's the easiest way to use up left over veggies in the fridge. My friend,Tina, who is sensitive to dairy and eggs came by a month ago when I planned on cooking veggie fritters. I had to come up with a substitute for eggs. I found a vegan recipe online that uses chickpea flour as a binder instead of eggs. Serve with a mixture of vegan mayo and ketchup (pictured below).
