CHEF'S DELIGHT: STEAMED CHICKEN ROLL. When I first tried my husband's version of this dish, I was totally amazed. He changed up the recipe by creating a paste with galangal, kaffir lime leaves, lemongrass, garlic, sugar, and fish sauce. Then, he mixed the paste in a bowl with ground chicken, raisins, diced bell peppers, and shredded carrots. He then spread the mixture flat on a piece of aluminum foil, added sliced boiled egg, and rolled it up. After that, he placed the rolls on a rack in a pan with water and baked them in a 350 F oven for about an hour.
