TWEAK AND NOURISH
ALL ABOUT ADDITIONS AND SUBSTITUTIONS: SWEET POTATO WAFFLE AND CREAM OF MUSHROOM I'm thrilled to have sweet potato waffles stocked in my freezer for those moments when oatmeal isn't on the breakfast menu. My go-to flour mix is usually whole wheat and oat flour, but I recently threw chickpea flour into the mix. This tweak made the waffles delightfully dense and firm. Since I skip the sugar, I love topping them with jam or marmalade for a burst of flavor!
I'm a huge fan of the mushroom flavor in cream of mushroom, but I'm not crazy about the heavy cream. So, I embarked on a mission to make it healthier by using cannellini beans for creaminess. I did make a little blunder by pairing it with Konjac noodles. Next time, I'll definitely go with linguini, as the texture of the Konjac noodles didn't quite match the rich consistency of the sauce.
