TWEAK AND NOURISH
ALL ABOUT FISH: GRILLED MACKEREL AND MISO SALMON.
One of the Filipino noodle dishes that I absolutely love is Pancit Malabon! This delightful dish features thick rice noodles drenched in a vibrant yellow-orange sauce made from annatto seeds, shrimp broth, crab fat, and fish sauce. Since I'm allergic to shrimp and crab, my husband and I creatively use fish broth instead. The typical toppings are a seafood lover's dream, with options like cooked shrimp, squid, smoked milkfish, mussels, oysters, hard-boiled eggs, pork, pork rinds, green onions, and lightly browned sautéed minced garlic. For our version, we topped it with hard-boiled eggs, grilled mackerel, and green onions.
Whenever my husband whips up his incredible miso salmon, we usually pair it with Japanese rice. But recently, I decided to mix things up by cooking Persian rice, and served it alongside the miso salmon, finishing it off with a sprinkle of bonito flakes. It was absolutely delicious!
