I decided to trim the parsley and chop up the leaves. With the chopped parsley, I planned on adding it to ground turkey to make burgers. Well, the container of chopped parsley remained untouched in the refrigerator for 2 days. On the third day, I decided to make 'Chimichurri just in case I felt like snacking on Pita bread. I made a lot of Chimichurri sauce. What to do? A light bulb went off! BAKED TOFU with CHIMICHURRI marinade (my version- olive oil, chopped parsley, red chili flakes, dried Mediterranean oregano, red wine vinegar, salt, pepper)
