All about the BEETS! I try to incorporate beets in my meals. Here's a look of what I do with beets:

BEET SMOOTHIE: almond milk, froxen pineapple, frozen banana, beet powder

BEET JUICE: beets, apples, carrots

ROASTED BEETS: Olive oil, Italian seasoning, balsamic vinegar, salt, pepper

FARRO with ROASTED BEETS, KALE, and OYSTER MUSHROOMS (see below)

Saute Oyster mushrooms

Saute Kale

Toast cooked Farro

Add diced roasted beets, sauteed oyster mushrooms and kale, pinch of Italian seasoning, drizzle with balsamic vinegar and truffle oil, salt and pepper to taste. May top with egg, grilled fish,or grilled meat. Enjoy!
