A SIMPLE VEGAN CURRY. I always have sweet potato, carrots, and chickpeas on hand. One day last week, I felt like eating curry. So I made it with a can of coconut milk, a teaspoon of green curry paste, a dash of salt, cubed sweet potato, cubed carrots, and chickpeas. Simmer until the carrots and chickpeas are tender. I kicked it up a notch the day after when I sprinkled toasted "riced" cauliflower on top:) Oh so healthy!
