Last week, I craved for Thai Fish Cakes. I imagined eating it with diced cucumber with Thai sweet chili sauce. I realized I didn't have the ingredients so I improvised. This is my version: TUNA TOFU FISH CAKES. First, I drained the tuna from a packet and drained the tofu as well. In a bowl, I added tofu, tuna, shredded celery, garlic powder, onion powder, potato starch, Panko bread crumbs, broccoli slaw from Trader Joe's (optional; I added it for the veggie effect), one egg, salt and pepper. Mix well and form into patties. Cook in a pan with minimal oil. Serve with diced cucumber in sweet chili sauce. Although it didn't taste like a real Thai fish cake, it surely satisfied my craving without feeling guilty:)
