One of my ingredient obsessions these days is CELERY. I put a lot of celery in some of the dishes I prepared last week. I made Turkey Meatloaf, Turkey Meatballs, and Salmon Sweet Potato Patties. For the TURKEY MEATLOAF, I mixed ground turkey with rolled oats (a lot), one egg, diced onions, diced celery, diced bell peppers, dash of Worcestershire sauce, ground garlic, dash ground black pepper, dash of salt, dash of Italian seasoning, dash of Mediterranean oregano. Top with a reduced marinara sauce or ketchup. Bake at 350 F for an hour. For the TURKEY MEATBALLS, I used almost the same ingredients as the meatloaf. For the SALMON SWEET POTATO PATTIES, I drained one can of wild salmon and mixed it with mashed cooked sweet potato, ground black pepper, salt, minced celery, green onions, drop of liquid smoke, egg, Panko bread crumbs, and a dash of Italian seasoning. Form into patties and pan fry with minimal oil.
