Simple and easy. When I am at a loss on what to prepare, I end up opening the refrigerator and pantry many times. One day, I had a lot of kale so I made a simple KALE SALAD with strawberries, chopped almonds, and vinaigrette. I always add a sweetener (honey or maple syrup) to the dressing when I'm eating Kale to offset its bitter taste. On the other hand, I crave for snacks all the time and try to make healthy alternatives to junk food. On this day, I made ROASTED CHICKPEAS with honey and cinnamon. I boiled the chickpeas, drained, and placed on a sheet pan. After roasting until golden brown, I transferred to a bowl with cinnamon and honey. I mixed the chickpeas until well-coated.
