Most of the time, I scroll through Pinterest for meal ideas when my fridge is full of veggies. I was inspired to make my own version of VEGGIE FRITTERS: shredded zucchini, corn, basil, Italian seasoning, salt, freshly ground pepper, quinoa, nutritional yeast, egg, chia seeds, ground flax, and potato starch. Once cooked, top with LEMON AIOLI: lemon juice, garlic, (vegan) mayo (use mini food processor or blender).
